Keto Beet Hummus
This colorful keto beet hummus is a low-carb take on the traditional dip. It has a creamy texture and an earthy flavor from the roasted beets and cauliflower.
Ingredients:
- 1 medium beet, roasted and peeled
- 1 cup cooked cauliflower florets
- 2 tablespoons tahini
- 2 cloves garlic, minced
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
In a food processor, combine roasted beet, cauliflower, tahini, garlic, and lemon juice
Pulse until smooth, scraping down the sides as needed
While the processor is running, slowly add olive oil until hummus reaches desired consistency
Season with salt and pepper to taste
Transfer to a serving bowl and garnish with a drizzle of olive oil, sesame seeds, and fresh herbs if desired
