Vegan Lemon Rosemary Barley Soup
A tasty and comforting vegan soup made with hearty barley and vegetables and the bright flavors of rosemary and lemon.
Ingredients:
- 1 cup barley
- 8 cups vegetable broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 1 lemon, zest and juice
- 2 tablespoons fresh rosemary, chopped
- Salt and pepper to taste
Instructions:
Barley and vegetable broth should be mixed together in a large pot
Bring up the temperature
Turn down the heat, cover, and let it cook for 30 minutes
Chop up some onion and garlic and cut up some carrots and celery to put in the pot
Keep cooking on low heat for another 15 to 20 minutes, or until the vegetables are soft
Add fresh rosemary, lemon zest, and lemon juice, and mix well
Add pepper and salt to taste
Enjoy while hot!
