Gluten-Free Christmas Raisin Bread



This gluten-free Christmas raisin bread is a festive and delicious treat that's perfect for holiday mornings or as a gift. It's packed with warm spices, plump raisins, and the comforting flavors of the season. Plus, it's gluten-free, making it suitable for those with dietary restrictions.

Ingredients:

  • 2 cups gluten-free all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup potato starch
  • 1/2 cup raisins
  • 1/4 cup chopped nuts optional
  • 1/4 cup brown sugar
  • 1 packet 2 1/4 tsp gluten-free active dry yeast
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/4 tsp xanthan gum
  • 2 eggs
  • 1 cup warm milk non-dairy for dairy-free
  • 1/4 cup unsweetened applesauce
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • Zest of 1 orange

Instructions:

In a small bowl, combine the warm milk and yeast

Let it sit for 5-10 minutes until frothy

In a large mixing bowl, combine the gluten-free all-purpose flour, almond flour, potato starch, brown sugar, salt, cinnamon, nutmeg, allspice, and xanthan gum

Add the yeast mixture, eggs, applesauce, melted coconut oil, and vanilla extract to the dry ingredients

Mix well until a dough forms

Fold in the raisins, chopped nuts if using, and orange zest into the dough

Grease a loaf pan and transfer the dough into it

Smooth the top with wet hands

Cover the pan with a clean kitchen towel and let it rise in a warm place for about 1-1

5 hours, or until it doubles in size

Preheat your oven to 350F 175C

Bake the bread in the preheated oven for 35-40 minutes or until it's golden brown on top and sounds hollow when tapped

Remove the bread from the pan and let it cool on a wire rack before slicing
